THE X.O® PROCESS
Lipid oxidation is an irreversible chemical alteration caused by the presence of metals, oxygen, acidity, chlororophyll, water or light and acting on the double bonds of unsaturated fatty acids. Oils rich in polyunsaturated fatty acids are therefore more prone to this oxidation phenomenon.
The XO® process guarantees the stability of polyunsaturated fatty acids according to the Rancimat Test*:
*Rancimat test: this is an accelerated oxidability test that estimates the time of resistance to oxidation. This test is standardised ISO 6886.
